Chicken a la Spice Sisters

Two Faces of Chicken

Yasmeen’s Version:

Ingredients –

1# Boneless, skinless Chicken Thigh Pieces

2x8oz cans of Organic diced Tomatoes OR 8 large Roma Tomatoes diced

2T Olive Oil

½ Packet of Spice Sisters Roarin’ Russum Spice Blend

Kosher Salt to taste

Instructions -

  • Set a rack in the middle of the oven / Warm oven to 375
  • Place chicken pieces in baking dish / Toss to coat with oil
  • Sprinkle ¼ packet of Spice Sisters Roarin’ Russum Spice Blend evenly over chicken
  • Pat spices into meat firmly / Turn chicken over and repeat on backside
  • Nestle tomato pieces among chicken and pour juices along the side of the pan (the dryer you leave the pieces, the crispier they will be)
  • Bake at 375 for 35 minutes
  • Serve with veggies and rice

 

LOVE YOUR LEFT-OVERS:  South Asian Fried Rice

  • Chop up whatever’s left of meat and veg and store with any pan sauces
  • Heat 2T of Olive Oil in large frying pan
  • Add left overs + extra veggies, rice, noodles, meat, even a scrambled egg or two
  • Fry until heated through
  • Serve with a bit more Roarin’ Russum or switch it up with some Tingly Togarashi atop

 

Margaret’s Version:

Ingredients –

½ # Boneless, skinless Chicken Thigh Pieces

½ T Spice Sisters Ha Bibi Baharat Spice Blend

2T Mambo Mama Red Wine Jelly w/Cardamom and Brandy & Orange

½ Medium Orange

Salt to taste (we didn’t use any this time 😊

Instructions -

  • Set a rack in the middle of the oven / Warm oven to 375
  • Place chicken pieces in baking dish
  • Sprinkle ¼ packet of Spice Sisters Ha Bibi Baharat Spice Blend evenly over chicken
  • Pat spices into meat firmly / Turn chicken over and repeat on backside
  • Juice ½ Orange into microwave safe dish / Add 2T Mambo Mama Red Wine Jelly
  • Heat for 30 seconds, stir to blend, repeat until Jelly and juice are blended
  • Pour mixture over chicken
  • Cut juiced orange half into 4-5 sections / arrange in pan with chicken
  • Cover with foil / Place in oven for 20 minutes / Uncover for last 10 minutes
  • Serve over rice and veggies. Enjoy!
